Celiac Awareness Month with Catelli Gluten Free Pastabilities Challenge!

In celebration of Celiac Awareness Month (May), I am taking part in the Catelli Gluten Free Pastabilities Challenge– and you can, too!  Read on for more details 🙂

Catelli gluten-free pasta is definitely one of my top 3 gluten-free pasta choices.  Here are a few of its particulars:

  • made from a four-grain blend of white rice, brown rice, corn, and quinoa
  • Available in spaghetti, fusilli, penne, and macaroni (I’m still waiting for farfale lol)
  • produced in a dedicated gluten-free facility
  • certified by the Canadian Celiac Association’s Gluten-Free Certification Program
  • low in sodium (0mg), source of fibre (3g) per serving (85g) of pasta
  • Easy to digest, with the great taste and texture of regular pasta
  • Available (and affordable) at all major retailers across Canada, in the pasta aisle

As for the challenge, Catelli is urging us to “Cook Out Of The (GLUTEN FREE PASTA) Box” 😉

While my recipe might not be the most gourmet, I do think you’re gonna like it!  Plus, you can dress it up or down in any way you like.  It can be part of a fancy dinner, or it can be excellent hangover food (haha). The best part is it can be made on a tight budget and when you’re super low energy and just want some comfort food in a flash. Add what YOU like to make it your perfect meal. But it IS a bit out of the box and if you haven’t tried this before….YOU NEED TO TRY IT!

The trick is in the CRISP.

You know your favorite part of a cheesy pasta casserole??? The part near the edge of the casserole dish where the cheese and pasta become delightfully crispy and broiled??? Well, this entire dish reminds me of that best part 🙂

In its simplest form, when you want something fast and cheap and yummy, all you really have to do is:

  • boil pasta as usual,
  • melt butter in a frying pan,
  • add cooked pasta, oregano, salt & pepper, and any other spices you wish,
  • fry up the pasta so that it becomes slightly crispy,
  • add parmesan cheese (or any cheese but I’ve found parmesan works best)
  • fry a little more until it all becomes a little crispy and melty and AWESOME!

Voila!  It’s that easy. And it’s SO GOOD!

However, if you want something a little fancier, try this recipe on for size. I just had a bowl and it was fantastic!

Here’s what you’ll need (plus butter and a few spices):

Sassy’s Brown Butter Crispy Pasta

Ingredients:

  • 1 cup uncooked Catelli Gluten Free Macaroni Pasta, cooked as per package directions (6min)
  • ¼ cup salted butter
  • 1 clove garlic, minced
  • 1-2 tbsp thinly sliced shallot
  • 2 mushrooms, diced
  • ¼ cup frozen peas
  • 1 tbsp dried oregano
  • salt & pepper to taste
  • up to 1 package of sliced prosciutto, cut into strips (I used about 5-6 slices)
  • ½ to 1 cup grated parmesan cheese

Directions:

  1. Cook pasta as directed.
  2. While pasta is cooking, melt butter in a pan on medium heat.
  3. Allow butter to bubble and brown slightly, being careful not to let it burn, and add garlic and shallot.
  4. After the garlic and shallot cook a little and shallot becomes slightly translucent, add mushrooms and frozen peas (I added them from frozen, but allow to thaw if you wish).
  5. You want all these items to sauté a little but keep in mind that you will also be sautéeing the pasta, so be sure not to overcook.
  6. Add the pasta to the frying pan; toss to coat in butter.
  7. Add oregano, salt & pepper, or any other spices that tickle your fancy.
  8. Toss the contents of frying pan frequently, while allowing edges of pasta to slightly crisp up.
  9. Add the prosciutto and continue cooking.
  10. Finally, add the parmesan cheese. Allow to melt, toss, allow to melt.
  11. It’s ready when everything is nicely crispy and melty!  You don’t want the pasta to be hard, just a nice golden brown on some of the edges.  Not easy to photograph, but just play it by ear. It’s pretty hard to mess up!
  12. ENJOY!

I really hope you like it!

These drinks will make your JAW DROP!

The sun is shining.

Spring is near.

I’m sitting in my yard thinkin’ bout hot days and cold drinks!

In particular: JAW DROP!

Last year I had the pleasure of meeting some of the Jaw Drop team at EAT! Vancouver (which was a blast, by the way). They introduced me to their fun and colorful adult beverages which taste great and pack a punch!  And whoever conceptualized this company’s branding is a complete genius, because not only are these vodka coolers fun to drink, they’re practically a fashion accessory 😉

With these five refreshing and somewhat nostalgic flavors, Jaw Drop has you covered for your next BBQ or beach party!

Their product names, images, and slogans are SASSY, just like me!  And, of course— GLUTEN FREE!

So, this summer when you’re looking for some adult refreshment, reach for some Jaw Drop because, as their slogan says:

“WHEN LIFE GIVES YOU LEMONS, SUCK THEM!”

**Currently only available in BC, Canada and limited flavors available in Alberta and Ontario!**

Remember to always drink responsibly!

Fraser Valley Food Show 2014

I’m writing a completely different kind of review for this year’s Fraser Valley Food Show, because I’m in a completely different place.  For instance, I still feel like I’m recovering from it and my blood pressure clocks in at 91/53 today, and I’ll be seeing at least three specialists in the next four weeks.  So, while I do enjoy giving you all a look into the background of these lovely local companies, I’m basically going to have to just tell you which companies I liked and maybe a few words about why, and let you do some investigative work if you so desire.  Checking the “About” section on their websites usually does the trick 😉  Regardless, I do think you should check out the products each and every one of these companies sells.  They’re worth it!

Country Prime Meats:Only the best meat snacks around! They even have gluten-free Teriyaki!

SpiceWorks: I had to bring home the Coconut Curry all-in-one kit; so good!

Happy Planet Soups: You have to check out their latest addition…it has MEAT in it!  Thai Chicken Soup, for the win!

NextJen Gluten-Free Flour: They have tons of recipes on their website.  So far I’ve only made the pizza crust, but it’s the first gf pizza crust I’ve ever made from scratch and it was great! (Still thin crust, but great lol)

Gourmet Creations Simply Vegetable Spreads: Try their Sundried Tomato spread in place of tomato sauce on your gf pizza or add some Carrot Ginger to your creamy squash soup for some extra zip!

Fire Belly Sauces: All natural and all delicious. Hope to see these in stores, soon!

Enerjive Quinoa Skinny Crackers: I’m so in love with these; both the savory and sweet varieties are outstanding!

IMG_5578

Ener-C: Vitamins, electrolytes, no artificial flavors, colors, or sweeteners, all from a Canadian company!

IMG_5575

Your Inspiration At Home: Amazing and all-natural seasonings inspired by many different cultures because fast, simple cooking doesn’t have to be boring!

Salt Spring Sea Salt Ltd: Ridiculously fragrant and unique salt blends evaporated and crafted by hand on Salt Spring Island!

IMG_5577

Kealy’s Diamond Vodka: Certified gluten-free vodka made with the newest technologies in alcohol filtration to give you the smoothest vodka you’ll ever try!  Official gluten-free vodka at Red Robin Restaurants— just ask for your cocktail to be made gluten-free!

IMG_5573

IMG_5579

Distillers Pride: The first certified gluten-free vodka (and brandy and rum varieties) that is endorsed by the Canadian Celiac Association and uses absolutely no gluten ingredients in their base or any stage of the process (while distillation is said to remove gluten, many Celiacs prefer a product that never contained gluten at any point in the process— and if you click the link it gives some reasons as to why).  They have some delicious flavored vodkas, including a fun Lemongrass and Ginger Remix!

IMG_5574

Glutenberg:  100% gluten-free beer that actually TASTES GOOD!  Made only from gluten-free ingredients (none of this “gluten-removed” stuff), Glutenberg has several varieties that are sure to please.  Their latest edition is the India Pale Ale, which is my new favorite, even smells amazing, with crisp citrus and floral notes.   I think the only kind I haven’t tried or seen yet is the Belgian Double, which also looks delicious.  The best news?  They are expanding to more places in the Fraser Valley!  Keep bugging your local liquor stores to get them in!

Two Brunettes and a Blonde! (and that wasn't even on purpose LOL)

Two Brunettes and a Blonde! (and that wasn’t even on purpose LOL)

I do hope you check out all of these companies, especially to all my BC followers….the Fraser Valley has so many amazing gluten-free products and vendors!

Sincerely,

Sassy

Not Goin’ Anywhere…

Well, the blog is officially renewed for another year 🙂  Thank you for all your continued support and feedback.

I’ll be heading to the Fraser Valley Food Show in Abbotsford this weekend, where I’ve been informed that the Gluten Free Living Show now covers over half the floor!  I had a great time last year and am looking forward to an even bigger event this weekend.  The show runs Friday, Saturday, and Sunday.  I plan to attend on Sunday and would LOVE to see you there 🙂

I also just received a box filled with Enerjive Quinoa Skinny crackers…I tried them last year at the Gluten Free Expo, and they’re amazing!  So, look forward to a review in the near future, or just trust me and go out and buy a box!  You won’t be disappointed!

I have a smile on my face and I know this is where I belong, and I’m very grateful to be here.

Stay Sassy 😉

Love,

Sassy Celiac

*And, YES, my hair is getting so long! Might be time to update my banner 😉

Day 21: The 21 Day Sugar Detox!

We did it!

Congrats to everyone who completed the detox alongside me, I hope you loved it as much as I did!

I mention in the video about minor weight loss and less bloating as a result of the detox, but forgot to mention other results.  Other things I noticed earlier on was when I had less congestion.  Over the weekend in Tofino I managed to pick up a cold, so that isn’t exactly the case now LOL  I really enjoy not feeling hungry; no blood sugar crashes and no urges to binge!  Personally, I didn’t notice more energy, though many people do.  I did seem to eventually start sleeping better.  My skin has been pretty great.  I tend to get keratosis pilaris but it is pretty clear when I’m eating this clean.  I still have headaches, brain fog, and pain, in that, many of my fibromyalgia symptoms did not change.  And I’m not sure if the low-grade fevers are from fibro, the antibiotics, the detox, or acute illness LOL

IMG_9455

Bottom line, I think my favorite part of The 21 Day Sugar Detox is losing weight/less bloating WHILE EATING BACON EVERY DAY!!!

Nuff said 😉

Sincerely,

Sassy

Day 19: The 21 Day Sugar Detox

I’m a bit run-down after my awesome weekend, but back on the program and finally managed to crack out a video for you today 🙂

Near the end I give a simple and delicious treat recipe that is detox-approved!

Here’s a picture of the Shepherd’s Pie I made using the recipe from The 21 Day Sugar Detox book!  Fantastic!

Day 10 and 11: The 21 Day Sugar Detox

Howdy, folks!

Guess what??!!

YOU’RE HALFWAY THERE!!!

Good for you, and I hope you’re feeling amazing 🙂

No video from me, today.  Some stuff came up yesterday and I had a pretty rough sleep so I’m just really not feeling up to it today.  Not feeling my usual SASSY self LOL

A note about the Carrot Pumpkin Spice Muffins…I left them out on the counter instead of refrigerating them, and I guess that was a bad idea.  I think it had been four days and I had four left.  I bit into one yesterday morning and I don’t know what happened, but it just tasted awful!  Kind of mushy, too.  So there ya go.  Lesson learned…so disappointing; I hate wasting food!

And I made a decision…since I didn’t get to cooking the new recipes yesterday and I’m leaving tomorrow for my trip, I put my eat in the freezer and I’m not going to make anything until I get back.  I’ll just make do with what I have for today and tomorrow morning.  Not feeling all that hungry, anyways.

If there is free wifi where I’m staying, then I’ll do my best to get a post up from lovely Tofino 🙂  If not…I’ll see you again on Tuesday!  Have a great (sugar-free) weekend!

Sincerely,

Sassy
