Catelli’s Reinvent Gluten Free Lasagne Challenge!

Catelli is at it again! They have added Gluten Free Lasagne and Gluten Free Linguine to their already stellar gluten free pasta lineup, which includes Spaghetti, Fusilli, Penne, and Macaroni. As with all their gluten free varieties, the Lasagne and Linguine are made from a unique four-grain blend of white rice, brown rice, corn, and quinoa.

In celebration of the launch of their brand new Gluten Free Lasagne noodles, Catelli is holding a “Catelli Reinvent Gluten Free Lasagne Challenge” and has asked myself and fellow gluten free bloggers to develop a unique lasagne recipe using their tasty pasta.

I had a lot of ideas…There really is SOOO much you can do with lasagne noodles! Catelli’s Gluten Free Lasagne noodles are about half as long as most regular lasagne noodles, which means lasagne roll-ups would be a little trickier, but what I liked was that it meant I could make mini-lasagnes!! I was able to try recipes out in a loaf pan, making just a couple of servings. Which is also pretty cool when you live alone and don’t want to have leftovers for days or if you have a full freezer haha 😉

I absolutely LOOOOVE mushrooms, so my first idea was a mushroom white lasagne. And, to be honest, it did turn out pretty delicious! I used four different types of mushrooms, created a rich bechamel sauce from scratch, and had a yummy cheesy mixture with sage and oregano. It was INCREDIBLY rich, but awesome. The only thing is, the bechamel or white sauce is very touchy. It’s tricky to get it to the correct consistency; not too watery, not too thick. And also to make a sufficient amount. So, I decided to scrap that one for now, though I am pretty excited about making alfredo sauces from scratch, in the future! I’ll get the hang of it 😉

I finally settled on a PEROGY lasagne! I used to love perogies before my diagnosis. And while there are several delicious gluten free versions of perogies, unfortunately they cost quite a bit more than their gluten-filled counterparts. That means, for me, they end up being a very rare treat.

But with Perogy Lasagne, you get all the yummy taste of perogies– the creamy potato, the smoky bacon, the caramelized onion, the cheese…OH, the cheese! –with either less work than making them from scratch, or at less cost than buying them 🙂

And this recipe is a cinch. I think the most difficult part is soaking the Catelli Gluten Free Lasagne noodles. I feel like this could potentially be avoided by adding some water to the pan while it bakes, but I didn’t want to take any chances and end up with crunchy noodles. And soaking them wasn’t really that big of a deal, anyways. Everything else you pretty much cook and mash all together! I added layers of peas on top of my potato layers for a pop of color and some added texture.

The result is a hearty, tasty, comforting lasagne, with that yummy perogy taste you know and love. I loved it garnished with green onion and a dollop of sour cream. I also loved cutting a leftover slice into pieces and frying it up with eggs as a delicious breakfast treat! It might not be much to look at, but I assure you these pictures do not do it justice!

Perogy Lasagne with Peas and Bacon (gluten-free)

Ingredients:

  • 4 medium/large white potatoes

  • 8-10 slices of bacon, cooked crisp and crumbled

  • 2 cups frozen peas, thawed

  • 5 tbsp plus ¼ cup butter, divided as 1 tbsp, 4tbsp, and ¼ cup

  • 1 small/medium onion, diced

  • 3-4 cloves garlic, chopped

  • 250g (one small container) 2% cottage cheese

  • 2 cups cheddar, divided as 1 cup and 1 cup

  • ¼ cup parmesan

  • 1 ½ cup mozzarella, divided as ½ cup and 1 cup

  • ½ cup milk

  • ¼ cup chopped green onion

  • salt and pepper, to taste

  • red pepper flakes, optional

  • about 12 Catelli oven-ready gluten-free lasagne noodles

Directions:

Preheat oven to 375F (190C)

  1. Peel potatoes and cut into squares, boil in a large pot of salted water until soft.

  2. While potatoes are cooking, melt 1 tbsp of butter in a pan. Add diced onion and chopped garlic and sautee until translucent and slightly caramelized.

  3. When potatoes are soft, drain water from the pot. Add the crumbled bacon, cooked onions and garlic, cottage cheese, 4tbsp of butter, 1 cup cheddar, ¼ cup parmesan, ½ cup mozzarella, milk, green onion, and lots of salt and pepper. Mash all of these ingredients together. I used an electric hand mixer to make it nice and smooth.

  4. Fill a pot with hot water. You will use this to soak the lasagne noodles. I soaked them in batches as I needed them so that they didn’t get too soggy. For instance, soak the amount you’ll need for the base while you’re preparing the pan. When you place those soaked noodles in the pan as your base, soak more noodles while you’re layering the ingredients onto your lasagne. They need to soak for 5-10 minutes.

  5. Line the pan you are using for the lasagne with tin foil and/or grease the pan. I use tin foil and then grease the tin foil for less clean up. I recommend a nice deep square pan/dish as it looks nicer when there are more layers. I didn’t have anything deep, so I just made a larger, flatter lasagna. Still delicious!

  6. Gently remove a soaked lasagne noodle from the water. Pat gently with a paper towel, but it will still be wet, and that’s okay. This isn’t as difficult or annoying as I thought it might be 😉

  7. Place a layer of lasagne noodles into the pan. Based on their shape and the size of my pan I used four noodles for the base. If you’re using a deeper pan you should be able to just use two noodles for the base.

  8. Spoon potato mixture onto the noodles, covering evenly.

  9. Generously sprinkle a layer of peas on top of potato mixture.

  10. Repeat with a layer of noodles, then potato mixture, then peas, until you’ve filled your pan! The top layer will be just noodles.

  11. Melt the remaining ¼ cup of butter and pour over top of noodles.

  12. Cover noodles with 1 cup of cheddar and 1 cup of mozzarella. Sprinkle with red pepper flakes, for a little hint of spice.

  13. Cover pan with tin foil, making sure the foil is not touching the cheese.

  14. Bake, covered, for 30min. Uncover and bake an additional 10min.

  15. Let stand 10min before enjoying! Garnish with green onion and serve with sour cream, if desired!

 

Celiac Awareness Month with Catelli Gluten Free Pastabilities Challenge!

In celebration of Celiac Awareness Month (May), I am taking part in the Catelli Gluten Free Pastabilities Challenge– and you can, too!  Read on for more details 🙂

Catelli gluten-free pasta is definitely one of my top 3 gluten-free pasta choices.  Here are a few of its particulars:

  • made from a four-grain blend of white rice, brown rice, corn, and quinoa
  • Available in spaghetti, fusilli, penne, and macaroni (I’m still waiting for farfale lol)
  • produced in a dedicated gluten-free facility
  • certified by the Canadian Celiac Association’s Gluten-Free Certification Program
  • low in sodium (0mg), source of fibre (3g) per serving (85g) of pasta
  • Easy to digest, with the great taste and texture of regular pasta
  • Available (and affordable) at all major retailers across Canada, in the pasta aisle

As for the challenge, Catelli is urging us to “Cook Out Of The (GLUTEN FREE PASTA) Box” 😉

While my recipe might not be the most gourmet, I do think you’re gonna like it!  Plus, you can dress it up or down in any way you like.  It can be part of a fancy dinner, or it can be excellent hangover food (haha). The best part is it can be made on a tight budget and when you’re super low energy and just want some comfort food in a flash. Add what YOU like to make it your perfect meal. But it IS a bit out of the box and if you haven’t tried this before….YOU NEED TO TRY IT!

The trick is in the CRISP.

You know your favorite part of a cheesy pasta casserole??? The part near the edge of the casserole dish where the cheese and pasta become delightfully crispy and broiled??? Well, this entire dish reminds me of that best part 🙂

In its simplest form, when you want something fast and cheap and yummy, all you really have to do is:

  • boil pasta as usual,
  • melt butter in a frying pan,
  • add cooked pasta, oregano, salt & pepper, and any other spices you wish,
  • fry up the pasta so that it becomes slightly crispy,
  • add parmesan cheese (or any cheese but I’ve found parmesan works best)
  • fry a little more until it all becomes a little crispy and melty and AWESOME!

Voila!  It’s that easy. And it’s SO GOOD!

However, if you want something a little fancier, try this recipe on for size. I just had a bowl and it was fantastic!

Here’s what you’ll need (plus butter and a few spices):

Sassy’s Brown Butter Crispy Pasta

Ingredients:

  • 1 cup uncooked Catelli Gluten Free Macaroni Pasta, cooked as per package directions (6min)
  • ¼ cup salted butter
  • 1 clove garlic, minced
  • 1-2 tbsp thinly sliced shallot
  • 2 mushrooms, diced
  • ¼ cup frozen peas
  • 1 tbsp dried oregano
  • salt & pepper to taste
  • up to 1 package of sliced prosciutto, cut into strips (I used about 5-6 slices)
  • ½ to 1 cup grated parmesan cheese

Directions:

  1. Cook pasta as directed.
  2. While pasta is cooking, melt butter in a pan on medium heat.
  3. Allow butter to bubble and brown slightly, being careful not to let it burn, and add garlic and shallot.
  4. After the garlic and shallot cook a little and shallot becomes slightly translucent, add mushrooms and frozen peas (I added them from frozen, but allow to thaw if you wish).
  5. You want all these items to sauté a little but keep in mind that you will also be sautéeing the pasta, so be sure not to overcook.
  6. Add the pasta to the frying pan; toss to coat in butter.
  7. Add oregano, salt & pepper, or any other spices that tickle your fancy.
  8. Toss the contents of frying pan frequently, while allowing edges of pasta to slightly crisp up.
  9. Add the prosciutto and continue cooking.
  10. Finally, add the parmesan cheese. Allow to melt, toss, allow to melt.
  11. It’s ready when everything is nicely crispy and melty!  You don’t want the pasta to be hard, just a nice golden brown on some of the edges.  Not easy to photograph, but just play it by ear. It’s pretty hard to mess up!

Fraser Valley Food Show 2014

I’m writing a completely different kind of review for this year’s Fraser Valley Food Show, because I’m in a completely different place.  For instance, I still feel like I’m recovering from it and my blood pressure clocks in at 91/53 today, and I’ll be seeing at least three specialists in the next four weeks.  So, while I do enjoy giving you all a look into the background of these lovely local companies, I’m basically going to have to just tell you which companies I liked and maybe a few words about why, and let you do some investigative work if you so desire.  Checking the “About” section on their websites usually does the trick 😉  Regardless, I do think you should check out the products each and every one of these companies sells.  They’re worth it!

Country Prime Meats:Only the best meat snacks around! They even have gluten-free Teriyaki!

SpiceWorks: I had to bring home the Coconut Curry all-in-one kit; so good!

Happy Planet Soups: You have to check out their latest addition…it has MEAT in it!  Thai Chicken Soup, for the win!

Glutenberg:  100% gluten-free beer that actually TASTES GOOD!  Made only from gluten-free ingredients (none of this “gluten-removed” stuff), Glutenberg has several varieties that are sure to please.  Their latest edition is the India Pale Ale, which is my new favorite, even smells amazing, with crisp citrus and floral notes.   I think the only kind I haven’t tried or seen yet is the Belgian Double, which also looks delicious.  The best news?  They are expanding to more places in the Fraser Valley!  Keep bugging your local liquor stores to get them in!

Not Goin’ Anywhere…

Well, the blog is officially renewed for another year 🙂  Thank you for all your continued support and feedback.

I’ll be heading to the Fraser Valley Food Show in Abbotsford this weekend, where I’ve been informed that the Gluten Free Living Show now covers over half the floor!  I had a great time last year and am looking forward to an even bigger event this weekend.  The show runs Friday, Saturday, and Sunday.  I plan to attend on Sunday and would LOVE to see you there 🙂

I also just received a box filled with Enerjive Quinoa Skinny crackers…I tried them last year at the Gluten Free Expo, and they’re amazing!  So, look forward to a review in the near future, or just trust me and go out and buy a box!  You won’t be disappointed!

I have a smile on my face and I know this is where I belong, and I’m very grateful to be here.

UPDATE I Never Thought I’d Be Making…

 

I can’t really believe I’m writing this update, and I’m honestly not exactly sure how I’m going to get this all out.  It’s been too scary and overwhelming to face all together in type.  But I think it will be a good step in growing and moving forward.  Regardless of how I write this, if it comes out detached and unemotional, make no mistake, my spirit is wounded.  But it is on the mend.

And it does seem indifferent to put these things in the form of a list, but that’s the way I think I need to do it.  So, here goes.

  • In March, I was raped the night before my birthday by someone I thought was a friend.  I was in shock and denial at first.  When I finally contacted Special Victims Services, they urged me to report the assault to the police and that doing so would also allow me to apply to Crime Victim Assistance to have them cover the costs of trauma counseling, as I was definitely not okay.  I have a history of PTSD which was typically manageable, but this new trauma definitely intensified everything.
  • I did report the rape.  Nothing came of it because I didn’t go to the hospital or police right away, so it was his word against mine.
  • What felt worse, though, was that Crime Victim Assistance denied my claim because I couldn’t prove the rape. I felt very alone.  Among a million other emotions.  I lost friends because he was part of a group that I hung out with.  And without trauma counseling, I. felt like I had to do it all on my own.  And because of my previous counseling experience, I felt like I SHOULD have been fine because I had the coping skills in my arsenal.  But I wasn’t fine.
  • Then, my scooter was stolen.  Again.  Which only added to my feelings of violation.
  • The scooter was recovered, but not considered fixable by insurance, so they cut me a cheque, minus the deductible.  So this meant I had to find a new scooter within my budget, when I barely felt like leaving my house.  When I did get a new (used) one, I was so terrified it was going to get stolen again that I kept going outside to see if it was still there.  Every little sound I heard.  I got a bat.  I was on edge.
  • During this time, my brother disowned me because I came out as bisexual.  I tried to stand up to him, but it only made things worse and he decided he didn’t want me around my nieces and nephew (please, no comments on my brother, I’m just trying to paint a picture of what was going on for me).
  • Lost medication and a misunderstanding with my doctor left me suddenly withdrawing cold turkey from prescription pain meds.  The hospital gave me some things to help, one pill in particular that lowered my blood pressure.
  • I met someone around this time and was happy he was around because the combination of my medically lowered blood pressure (it got as low as 79/42 at one point and I was somehow still conscious), not sleeping well, not eating much because of the withdrawals, and standing up too fast…it was the perfect storm.  I fainted and fell backwards, head first onto ceramic tiles.
  • I wasn’t unconscious for too long, but when I woke up, I saw a terrified face standing over me which made ME terrified.  I didn’t know why I was on the floor, I didn’t remember that we’d moved from the bedroom to the living room, so I didn’t know why I was in the living room…and my head hurt like the dickens.  I actually thought it was bleeding, but miraculously I have tough skin.  The paramedics came, and had to call three firemen to help get me out of my house and the property.  I might be thin, but I’m long, and those corners were awful.  I had my eyes closed at first and at one point thought I was upside down, but in fact, they had stood me up on the end and it felt like I was hanging from the neck brace.  I’m usually very brave during medical emergencies because I’ve been through so many (ha!), but from the second I gained consciousness from this one, I was absolutely terrified and couldn’t stop crying.
  • They sent me home without so much as an x-ray.  I’m still waiting for a CT scan.  This was about a month ago, now.  And I’m still having memory and confusion problems that are worse than they were with “just” ordinary brain fog.  And my ear keeps doing this “whooshing” thing…
  • So, now I was withdrawing AND recovering from a pretty bad concussion.  Then I got a systemic yeast infection, that included oral thrush…what?! Ya, that one surprised even myself.  Clearly, my immune system was deep in the gutters.  And I’ve been having bladder pain for months, which might end up being Interstitial Cystitis.
  • What I ignored at the time, is that I was dating someone who was abusive, controlling, and manipulative.  At least I can say “was”, because I managed to get him out of my life just two days ago.  Not before I lent him money that I will never see again, but that can live on his conscious…taking money from a woman on disability.  He saw my weaknesses and capitalized.  When he was good, he was great.  But it’s just another lesson.

It’s all just a lesson.  Lesson upon lessons.  I can learn from all of it.  I’m a survivor.  That’s the gift.  The gift is also realizing that I’m truly NOT alone.  In the last couple of days I’ve felt more love from friends than I have in a while.  And my mom, of course, is always there for me and I love her dearly.

So!  What does this mean for Sassy Celiac?

Well, for starters, I’d like to apologize to the brands and events that I was supposed to review.  I felt guilty, but I had to let that guilt go and do my best to get through each day.

Secondly, my “lease” or whatever it is…my subscription for this site is coming up next month and I’m uncertain whether I will renew.  I love helping people and am so grateful for all the connections I’ve made through…well, through this crazy disease LOL  That was the gift that Celiac Disease gave me.  All of you 🙂

However, right now, I think I have a lot of healing to do, and I think it might involve a different journey.  I mean, obviously I’ll still be gluten-free.  And, three years later, my TTG numbers are SO CLOSE to normal.  But I’ll always be interested in new products and events.  In fact, I already have a date lined up with my mom to the Fraser Valley Food Show in October 🙂  But I think I need to do it with less feelings of self-imposed pressure and obligation.

Even as I’m writing this, I’m completely unsure whether or not I will renew LOL

But just in case, what I really want to say is……………

WAY BETTER SNACKS  is  a line of a variety of healthier tortilla chips, made with interesting things like sprouted broccoli and daikon radish seeds that contain natural antioxidants.  Interested?  Here’s the rundown:

  • Certified Gluten Free
  • Non GMO Project Verified
  • Kosher
  • Vegan
  • Excellent Source of Whole Grains
  • Low Sodium
  • Good Source of Fiber
  • All Natural
  • Contains: No Trans Fat, Artificial Colors, Flavors, or Preservatives

Why sprouted?  Sprouting increases vitamins, mineral, antioxidants, digestibility, and nutrient absorption of grains and seeds (and nuts, though these are nut-free).

Variety!  There are tons of different kinds, each with a slightly different taste.  I’m a little sad that I didn’t get to try what must be their new flavors or aren’t available in Canada: Sriracha (with sprouted kale seeds..FUN!) and Mustard & Onion….they sound pretty tasty!  Here are the other kinds:

My favorite was the Sweet Chili…which is why I’d be excited to try their new flavors: I like to have a little flava on my chips 😉  The Sweet Potato was great and I think you could have some fun coming up with unique dips for that one…like maybe Greek yogurt with cinnamon and brown sugar?  How good would THAT be?! YUM!  My 3rd fav was the Multi-Grain, as it was very light-tasting and most like a yellow corn tortilla chip.  These chips are definitely hearty enough to stand up to dips and toppings.  They were all good, though, and I would definitely consider them as a healthy alternative when I get a chip and salsa and/or chip and dip craving 🙂

Unfortunately, it looks like they have some pita chips and crackers which are NOT gluten-free (booooo!), so please take care when choosing your products.  It does look like all their Tortilla Chips are Certified Gluten Free, though, and the bags are clearly labeled, so as always…check all your labels all the time!

TuZen: Finally! A Probiotic That Makes A Difference!

Just a quick post, as there are really only two things you need to know about this product:

  1. The Name: TuZen
  2. IT WORKS!

Okay, TuZen is a probiotic that was recommended to me by my lovely Gastroenterologist.  I had never heard of it.  It’s one of those “behind the counter” varieties.  So, you may have to ask for it, but you don’t require a prescription.  Though, since my doctor has said I NEED to be taking a probiotic, I am still working on getting it covered.

Anyways, within a week or so of taking one pill daily I noticed that it was helping!  My major gastrointestinal complaint is chronic constipation.  I even had to go to the hospital twice for impacted/obstructed bowels and thought with the medication I’m on that I would forever be taking Restoralax on a daily basis PLUS a probiotic.

Well, I haven’t used Restoralax in weeks!!!  I am now having fairly regular bowel movements and haven’t noticed much gas, bloating, or distension.

It’s a POOPING miracle!!!

I honestly was trying a different probiotic every month, at various prices, strains, and strengths, and honestly noticing NOTHING.  So, this is pretty great.  Yes, it’s a dollar a pill, but on the last Wednesday of every month at the pharmacy that was formerly PURE in Chilliwack/Sardis they have 20% off natural health products.  Plus, as I mentioned, it WORKS.  So that makes it very worth it, in comparison.

As always, I like to share the things that work for me with YOU, in hopes that they will work for you, too!

If you suffer from IBS, chronic constipation, diarrhea, SIBO, are newly diagnosed, or just having some tummy troubles, I would suggest giving TuZen a try.

One final note, however, this is a probiotic specifically targeted at your gut.  Thus, if you are taking an antibiotic for any reason, I would suggest supplementing with yogurt or acidophilus to avoid yeast infections, as TuZen does not contain that particular strain.

Vancouver Gluten Free Expo 2014

In all honesty, I almost didn’t go.

I know what you’re thinking.

SASSY!  How could you have NOT gone to the Expo?  I mean, these are your people!  This your place!  This is what it’s all about!

And you’re right.  I live for the Expo every year and wish there were even more gluten-free/Celiac events.  But you know, life does happen.  My transportation options are limited, as are finances, not to mention my trip to the ER only days before.

So, I am VERY thankful that I was able to attend and it was truly a great event 🙂

I have to hand it to Margaret Dron, she definitely is learning and growing with each Expo, and this one seemed to have all the prior kinks worked out!  No gigantic lines, no people getting turned away (that I know of?), no major traffic congestion.  I did not attend the presentations this year so I’m not sure how the volume and seating was there, but I peeked at it and it seemed like it would work well.

And the exhibitors…OH, the exhibitors!  The sheer NUMBER of exhibitors was astounding!  There was a great balance of new and “old”, and I love when some of the well-known companies launch fun new products.  There were also plenty of dairy free, and also corn, soy, nut, etc free options (though if I had a severe nut allergy I might have been nervous, but I’m sure actions were taken to avoid cross-contamination).  There was also a blend of super healthy products mixed among decadence and indulgence.  And let’s not forget about the great deals!!!  I saw one guy pushing a stroller with about four or five full bags of loot hanging off the sides!  Lastly, I definitely have to mention the samples.  I was getting so full!  You get all excited in the beginning and want to try anything, but next time I will seriously pace myself LOL  It was nice to see how generous everyone was, though, and I was grateful for any of the samples I was able to take home and enjoy on my own time. 🙂

RUMBLE: SASSY’S BEST OF SHOW FOR 2014!!!

 Most of you know that when I review a product I look at more than just taste.  Rumble is one of those products that I could rave about for quite some time, but I’ll try to keep it somewhat concise!  First, what is it?  Basically, it is a highly nutritious ready-to-drink beverage.  But it’s so much more than that.  The Rumble backstory is phenomenal.  Paul Underhill, born with Cystic Fibrosis and now thriving after a double lung transplant, developed Rumble in his own kitchen out of a desire to optimally fuel his transplant wait, recovery, and his now-active lifestyle.  I spoke with him briefly at the Expo and when I mentioned how I’ve been struggling with my appetite lately, Paul said that was a struggle for him, too.  I’ve been looking for healthy and easy ways to make sure I’m still getting nutrients when I’m not hungry.  The choices are usually Ensure/Boost, which are full of fake stuff, or protein powders which are difficult to choose from and even then I have to add hemp/fish oil, berries, and greens…so we knows that involves heavy blender usage!

The cool thing about Rumble is that Paul and his team made sure to research and use the most highly absorbable and useful protein, which most studies show is whey.  Yet, even though they use milk and whey proteins, the drink remains 99.8% lactose-free and is easy to digest even for most people with lactose issues.  It contains 20g of protein per servings which is pretty much the perfect amount and is comparable to more than 3 eggs, but with only 10mg of cholesterol.  Next, it includes 3100mg of Omega 3’s in the form of flaxseed and walnut/pumpkinseed oil, giving it a desirable 3 : 1 omega 3 to omega 6 ratio that is proven to suppress inflammation and reduce the risk of chronic diseases (wherein, a lower ratio produces a more positive effect and most common diets are far too high in omega 6).  I think my favorite part might be that it includes antioxidants and greens in the form of green tea extract (though it’s caffeine-free), pomegranate extract, kale, spinach, and black currant, cherry, and red beet juice concentrates, which adds up to the equivalent of 1 apple, 1.5 cups of broccoli, and 1 cup of berries.  And guess what!  8 grams of fibre!  That’s pretty rad.  Your daily recommended intake is around 20-30 grams and this is in liquid form and does NOT cause stomach upset or flatulence.  What it doesn’t contain is gluten, soy, GMOs, or anything artificial, and Dutch Cocoa is nut-free!  Naturally sweetened with maple syrup, agave nectar, and stevia, it contains only 1g of simple sugars per bottle.

All that, and it comes in a fun resealable, recyclable/repurposeable bottle and…you betcha…it tastes GREAT!  It’s super smooth and creamy, yet not overly so, light tasting, refreshing, and comes in Dutch Cocoa and Vanilla Maple, both equally fantastic.

Canyon Bakehouse Gluten Free Breads:  Canyon Bakehouse is definitely the other company that colored me most impressed!  I’ve pretty much given up buying gluten-free bread unless it’s from a gluten-free bakery, and even then it’s “iffy”.  It tends to only last a couple of days or requires freezing and then toasting and/or it’s often not worth the expense when I still can’t make a darn sandwich!

However, Canyon Bakehouse has renewed my sandwich-eating hopes and I can’t wait to find it!I tried the 7-grain and the “not-Rye” Deli Rye Style…yep, rye taste without the rye!  Unfortunately, the exhibitor didn’t seem incredibly familiar with the product or Celiac Disease when I questioned the rye bread, wondering how it could be gluten-free if it was rye, but a quick look at the package itself gave me my answers.  With no rye included, I think the addition of caraway seeds definitely assists in the rye-like taste.

I have sometimes found with gluten-free breads that for some reason they are softer and taste better at the Expos than they do when I find them in stores.  Sometimes it’s because they are in the freezer section and don’t taste the same once defrosted.  The woman wasn’t sure whether they would be in the freezer section or found fresh.

If these breads are as soft and yummy as they were at the Expo, I will happily make the first sandwich I’ve made in a long, long time and will love to add this staple back into my lunch options! Editors Note: Since writing this, I have delightfully found Canyon Bakehouse in the gluten-free frozen section of my local Superstore and have already gone back for more!

Food for Life: I’m not incredibly familiar with Food for Life’s products, but let me tell you, they make an INCREDIBLE English Muffin.  Granted, it is the first gluten-free english muffin I’ve tried, but truly was delightful.  I can’t even imagine how great they would be as part of a yummy Eggs Benedict!  Here are a few tidbits about the company:

Kitchening & Co:  Another company that I know little about, but whom I adore!  Not just for their absolutely divine and to-die-for gluten-free macarons, but for the people behind the product.  I’ve met the Kitchening & Co staff a couple times at Expos and Food Fairs and they are friendly and personable and bubbly and kind!  They truly care about their product and the community that simply loves to consume it.

They are true to their claims of being all about community, making the best products, relationships, healthy and balanced living, and supporting local businesses and food sources.  They use no artificial colors or flavors in their aesthetically pleasing macarons, which is amazing, because these cute desserts look too good to eat…and yet, I can’t help myself 🙂  Did I mention my birthday is coming up?  You could not go wrong with a beautiful gift box of these delectable delights!  Available at many places in Vancouver, but stationed in Fort Langley; I’ll be checking out Lee’s Market!

Happy Planet: Soup is pretty easy and inexpensive to make, but it is time-consuming.  Yet, finding ready-made and HEALTHY gluten-free soups can prove a bit difficult.  Campbell’s still only makes a handful of gluten-free soups and most aren’t crazy healthy.  You might know Happy Planet for their delicious juices, but you should really check them out for their fantastic soups!  I love that the company was started by two guys and a blender 🙂  They are also local and Canadian!  Happy Planet provides mostly organic and while their products are not GMO, they are still working on their GMO certification.

I was excited to see they have even released a new line of locally-inspired soups that includes Chilliwack Broccoli and Cheddar!!!  However, the only gluten-free locally-inspired soup is the Chatham Carrot & Ginger…please work on this, Happy Planet!  Soup does NOT require gluten!  Even so, all their juices and smoothies and 10 of their soups are gluten-free and I invite you to try the Thai Coconut Soup as it is FABULOUS!  They’re made fresh and are found in a refrigerator section and your purchase helps support Food Banks across Canada! BONUS!

Bio-K+: My doctor has told me that I need to always take probiotics.  Unfortunately, they are not covered by MediCare and they’re quite pricey if you want good quality.  When I want the BEST quality and I can afford it (or can’t afford not to, like maybe during/after my 8 weeks of antibiotics for SIBO), I go for Bio-K+.  Listen up, lactose-intolerants and dairy-avoiders because they even have a fermented rice formula that is dairy, corn, gluten, soy, and sugar free.  I like that they are used by hospitals throughout Canada and the United States and that proof of results is demonstrated by published clinical studies.  I switch probiotics all the time and have yet to notice any difference.  However, if I could afford Bio-K+ all the time or get it covered, I think I might notice a difference, and as recommended by the dietitian and consultant at the show, I will be working with my doctor to try to get it covered when he returns.

The Gluten Free Chef: These guys make a great pizza crust, and I’ll let you in on a little secret…I’m pizza-obsessed!  I have yet to find a gluten-free pizza that is even close to the type of yummy pizza I used to enjoy in moderation, however, this crust is definitely tasty.  I really like the texture.  Gluten, nut, dairy, egg, and soy free, they are currently only being sold online and at Expos.  I recommend giving SPUD.COM a shot if you’re interested in ordering.  SPUD is a sustainable grocery urban delivery service and first time users can get a $40 box (looks like the size of a big apple box) full of seasonal, locally sourced, organic produce delivered to your door for only $20!  No delivery fee on this box, and YES, even to Chilliwack!  I think that is definitely worth checking out, and I will certainly be doing so for next month 🙂

Enerjive Quinoa Skinny Crackers: I had never seen or heard of these and I was pleasantly surprised!  Created after receiving a gluten intolerance diagnosis and having a disappointing encounters with chalky bread, Enerjive is all about “Yummy Health”.  I love that they have both savory and sweet options!  I’m a savory person; how about you?  When I saw the different flavors, I remember saying I wanted to try them ALL.  Yet, after trying one I realized I would not be able to do so…they are surprisingly very filling!  Which I think is GREAT because I wouldn’t end up eating an entire box. 🙂 The texture is fantastic.  They are a hearty, thick cracker that is thinner than a crostini but would hold up to dipping and toppings like a crostini would!  Great on their own or with dips, they are gluten, dairy, corn, nut, and GMO free and made in a dedicated gluten-free facility.  All appear to be soy-free, except for the Chocolate FIX flavor, and contain no artificial coloring, preservatives, or flavoring.  Choose from BELLA Savoury Italian, Garlic Cayenne HEAT, Rock Salt CRAVE, Lemon Berry BURST, or Chocolate FIX!

OOGIE’S:  Looking for a decently-priced, fairly accessible, and delicious snack from a rad company?!  Reach for OOGIE’S!  As always, this tasty treat is gluten-free, non-GMO, all-natural, trans-fat and cholesterol free.  What’s new from OOGIE’S?  Well, they’ve got some new bold flavors like Hatch Chili con Queso; cheesy with a kick…and their first dairy-free flavor: Spicy Chipotle & Lime.  And with the big bags they sell at Costco, they are very hard to pass up!

Udi’s:  So there’s a bit of confusion surrounding Udi’s lately.  I’m still not exactly sure if they’ll be changing the name of their beloved breads or if it is only the Denver-area restaurant, catering, and bakery establishments that will be changing their name…but I’m PRETTY SURE, the brand many have come to love will not be changing.  And I know for sure their famous recipes will indeed stay the same.  I’m pretty familiar with Udi’s, but for over a year I’ve been on the lookout for some of their new products…specifically, their new “Everything Inside” bagels.  Thankfully, the lovely people at Udi’s sent me home with a very special sample, and let me tell you, it was worth the wait!  You’ve heard of an Everything bagel, right?  Well, the Everything Inside bagel is everything that an Everything bagel is…except all the goodness is baked INSIDE the bagel instead of on top, and is not only delightful, but avoids all the mess!  Great job, Udi’s!  I do hope to figure things out with their site, though.  While I can find the US/Canada site by searching certain items, if I type in udisglutenfree.com it takes me to the UK site.  A little bit confusing, to say the least!

Farafena: Farafena (which means Africa) offers several natural and organic products and is committed to developing sustainable agro businesses, collaborating with local entrepreneurs, women’s cooperatives, and family-owned businesses in the Sahel region of Mali.  I didn’t actually have the pleasure of sampling their product, but they offer a gluten-free flour from a grain I have never heard of.  Fonio is supposedly tasty, light, easily digestible, and is low on the glycemic index.  I’m curious how it performs in recipes!  They also offer things like shea butter, dried mango, and something called Moringa powder, a superfood that is said to improve energy levels and general health.  I’m not exactly sure where to find their products, though some are sold on Etsy, and you can email/phone them for more information.

Judy G:  Here’s my bottom line with Judy G gluten-free pizzas…I tried their Roasted Mediterranean Artichoke pizza at the Expo and I didn’t even NOTICE that there wasn’t any CHEESE on it!!!  I’m a total cheese monster, and after months and months of lactose-free, my gut has healed to a point that I can (and do) enjoy it in moderation, so I normally wouldn’t even BOTHER with a dairy-free pizza.  So to be impressed by a dairy-free, cheeseless pizza is truly saying something, in my eyes 🙂  Judy G provides frozen crusts and prepared pizzas that are free from most common allergens, including crusts free from gluten, soy, egg, and dairy/lactose, and a Lactose-Free Cheese Trio that is topped with organic lactose-free cheese!  As I do still limit my dairy consumption, I would definitely like to give this one a try!  Her two meat-containing pizzas are even free of sulphites!  I’m still on the lookout for these and will likely have to request them in my area, however they should be available at Marketplace IGAs throughout BC, as well as Sobeys/Thrifty Foods throughout Western Canada…I’ll be printing off the request form if I still can’t find them!

Explore Asian: I’m pretty excited about this product and I know some of my American fans have already found it and love it 🙂  Explore Asian offers several products, but I am currently most interested in their gluten-free Organic Bean Pasta!  With four varieties, including mung bean, soybean, black bean, and adzuki, these unique pastas are chock full of PROTEIN and FIBER with less carbs than other pasta…that’s a win in my book and for anyone who is regulating their blood sugar.  Also great for vegetarians looking for a fast protein source that might be a bit tastier than a bowl of beans!  The black bean variety reminds me of soba noodles that I once loved and can be served warm or cold.  While I don’t often do soy, they also have soybean noodle soups which would be great on the go and since they use 100% organic soybean, at least it’s non-GMO soy.  These are also high protein and fiber, and even high in iron…though, I might avoid the “salt sachet” as it contributes an additional 606mg of sodium (that’s somewhat expected of an instant noodle soup and at least you have the option).  In BC, you can find Explore Asian in select Vancouver stores, or order online from Low Carb Canada.  I was under the impression that they are currently expanding, so be on the lookout!

Glutenberg:  While I did not get to sample this new gluten-free beer due to, you know, the law…I really would like to give it a try!  I like that there are several options: Blonde, American Pale Ale, Red, and Belgian Double!  Yummy!  I’ll see if I can get a sample of these for review for you guys 🙂  And even though I didn’t get to try these, I had to mention them and post this photo because, let’s face it, this guy’s moustache is RAD! 🙂

hOMegrown Living Foods:  With the emphasis on “OM”, this is my kind of company.  Not just gluten-free, but grain-free, sprouted, raw, no added sugar, low GI, organic, and local!  I didn’t get to try a lot of their product, but this is definitely something I would snack on.  They have kale crisps, cookie-type snacks, and they even had these neat skinny little bagels that were good on their own but would be good with some sort of nut butter or hummus-like spread.  And it’s all sprouted and dehydrated at low temperatures so it remains RAWesome 😉  And here’s a tasty scoop for you: Visit their online store and receive 25% off your first purchase with coupon code HGSHOP !  Enjoy!

So, there you have it!  There were plenty, PLENTY more companies and products and awesomeness, but these ones really stood out for me.  I hope this review encourages you to search for and try out some new products and maybe find some new favorites for yourself!  Much thanks to Margaret Dron for a wonderful, fully gluten-free Expo that gets better each time!
